I have lived down south for 30 years and have tried so many Cajuns and creole dishes. All of them had explosive flavor because that is how Cajuns cook. Flavor is never spared in Louisiana or Texas. The food at Fat Tuesday has a lot to be desired. It is actually horrible and is a disgrace to the Cajuns that can actually cook. The boudan balls tasted like the grease they were burned in. The catfish fillets also tasted like the grease they were burned in. I was in just after lunch expecting things to taste great but it was a great disappointment.
