Hillsboro is not known for its cuisine (choices are rather bleak). When Happy China opened its doors a couple of years ago, I was very surprised at the quality AND quantity of their dishes. Turns out they did a demographic study for the best place to put a Chinese restaurant and Hillsboro came up as the best location (surprise!). These guys come from Union, NJ and bring good recipes, fresh ingredients (veggies crisp, shrimp large, beef tender) and quick service. This is hands down 1 of the 2 best places to eat in Hillsboro (the other is the Mexican food joint).
