Having fished on the west coast annually for the past 15 years, our group always brings our catch home. However, on our trip in July of 2018, we decided to try something new and dropped off three Chinook at St. Jean's at the Vancouver airport for canning. The service at St. Jean's was exceptional, and the canned Chinook we received was delicious, even more so than store-bought options. I was pleasantly surprised by the reasonable cost, which was lower than purchasing canned Sockeye salmon at Costco. It's convenient to have our sport-caught fish processed, packaged, and shipped, especially since St. Jean's is the only remaining canning facility in Western Canada that I'm aware of. Their local smoked oysters and Candy Smoked salmon are also fantastic additions to their offerings.
