During a layover at O'Hare, I discovered a vending machine offering salads in jars that were fresh, well-portioned, and thoughtfully prepared for storage. I tried the Harvest Vegetable Salad and later the Buffalo Ranch Salad with tofu, both of which were delicious, filling, and a refreshing alternative to typical airport food options.
