Absolutely disgusting! I do mean disgusting. I don't know where the owners are from, but a complete taste profile & overhaul needs to be done.
1. Collards are a part of the bitter greens family. Adding cups of vinegar & sugar (which damn well shouldn't be in it) won't help. That's a common mistake that's made too much. These collards are disgusting. This meal is most certainly not worth over $20+ at all.
2. You're using "Cajun" and "Creole" interchangeably and that's a huge misstep. Either a dish is Cajun or it's Creole but it most certainly isn't both. A Cajun based dish shouldn't be slathered in Creole sauces. It's just not done and the cultures are completely different.
3. Texas is beef-based barbecue state. Yes, we cook pork barbecue, but we specialize in beef barbecue. Tennessee a pork-based barbecue state. Never in life, should brisket be sauced in a Tennessee based sauce...which is usually a thin vinegar based sauce, mop sauce or dry rub. The rubs for Texas and Tennessee barbecue are different.
4. Everything that's Cajun or Creole doesn't have to be hot! Yes, Cajun cuisine can be on the spicier side, even more so than Creole, but that doesn't mean that the food needs to meet a "spicy as hell" requisite. Cajun doesn't always mean hot.
5. Catfish is a staple in the South and though our catfish filets are of a decent size? We're usually served two filets or one huge filet. Charging $18+ for a one filet catfish that's 6 to ounces isn't going to fly. If you're serving 6oz catfish filets? A dinner plate that costs almost $20 should come with 2 filets and not one, regardless of the 2 sides that comes with it. It's especially problematic if your sides leave much to be desired.
Maybe you have Southern roots and maybe you don't. If you do? You know better! If you don't? Just ask. If opened a restaurant next to yours today? You would be out of business in a week. You're in the unique position...to be the only restaurant in the area that serves Southern /Texan/Cajun/Creole and Barbecue based cuisine...in an area where people aren't used to accessing it. They don't know what the food should taste like...but I do. I know that I probably won't get one, but I deserve a refund or a different meal. The food is still on the counter. I've wasted $25+ on food that's inedible.
