A couple of months ago, my boyfriend and I ventured into a small, cozy Vietnamese restaurant in Des Moines where the air was thick with the inviting aroma of fresh herbs and simmering broths. The friendly staff hustled to keep up with the bustling crowd, serving dishes that ranged from perfectly crisp pork belly wrapped in vermicelli to fragrant pho that warmed us on a chilly day. Though the wait for some plates was a bit long, each bite revealed layers of authentic flavors that made every moment worthwhile and left me eager to return for more.
