This is my review of Genuine Bistro in Debary. Some background, I have been frequenting the place for a decade. It has changed hands at least three times I know of including recently. My wife and I decided to try it 3 months ago after hearing it had finally sold, knowing that the previous owner had been trying to sell for years. I am a former four-time restaurant owner including a 15 time best of Orlando award winning chef. I have opened numerous kitchens and enjoy a variety of culinary venues. The changes Kat, new owner, has made to the menu have been superb. As she is a local Floridian and a clam farmer, she has introduced many new ingredient sources to her and her chef’s menu. I also noticed fresh oysters, local cattle, cheeses and vegetables. It is important to me when I see local farmers involved in my dining choices. This is great for our local economy and the smaller businesses. The prices are very reasonable for the product that is delivered. I also love the inclusion of theme nights that are being testing, i.e. local women farmers menus. There are still some old menu favorites that have been tweaked. The former owner had become extremely inconsistent so we had stopped frequenting. Now it is back to being a weekly stop. I can highly recommend you try this eatery. You won’t be disappointed. I do not recommend this establishment. I have given this restaurant five tries, only to be left unsatisfied, disappointed, and with a bad taste in my mouth.
My first meal there was a simple Caesar salad with blackened chicken. The chicken was over cooked and dry. About 1/3 of the way through my meal I found a HAIR. Unacceptable! This was brought to our servers attention, who profusely apologized and wanted to make it right. However, the owner being in the restaurant and informed of the incident, showed no accountability or concern.
My second meal was a Caesar salad with blackened salmon, which came recommended. The salmon was mushy, lacked flavor, and was left on my plate for the server to return to the kitchen. We all sat at the bar and noticed how frustrated the wait staff were that day but they were still pleasant to us. On a positive note, this visit we tried the babaganoush - which we enjoyed - and would order again. Our server was sociable and seasoned and we enjoyed their conversation and service despite our dissatisfaction with our meals.
My third visit was no better. We did have to wait some time before a server came to our table. Upon receipt of our order, two of the four meals were cold. They appeared short staffed and two menu items were not available. The table of six next to us left because no one came to their table for over 20 minutes.
My fourth visit was also disappointing. Again, service was slow. This time there were only two of us. I ordered a burger medium well which arrived at the table bleeding and had to be sent back.
My final visit and once again, the waitress informed us that they were out of two of the three items that we were trying to order. We revisited the menu and placed a new order. We enjoyed sitting outside with the heaters and music - however - when the food arrived it was nothing more than average.
Furthermore and in my opinion, I was shocked to see a new owner be far from congenial with her patrons. As evidenced by, her apathetic “table side manners” (to our table multiple times), no respect for her disgruntled patrons (the tables right next to us 3 of the 5 times), she outwardly and publicly scolded her wait staff in front of customers, and has shown a lack respect for both patrons and employees.

Had a to go order of calamari this past Friday. Lookout Goodyear tire, you've got competition. Breading was fine, grease ok, but the chew factor was on a different level. The "chef" should go to Debary Diner. They don't know how to cook either.
