If you're in Hilo, you have to check out the lechon and garlic shrimp from the food truck out in Honokaa. The lechon is perfectly roasted with crunchy skin and juicy meat, accompanied by a refreshing papaya salad that stands out from the usual offerings. After driving all that way, I can say it was absolutely worth it, and I can't wait to go back for more!
