Most of the menu is worth checking out, but the chicken enchiladas are the star. They are truly outstanding! I have no idea what the special sauce is composed of, but it is out of this world delicious. And the chips and salsa are the best I've had at any Mexican restaurant ever. The chips are fresh, warm, thin, and crispy. The salsa is a superb blend of herbs and spices that demands you keep dipping those fantastic chips until your meal arrives! Atmosphere and service is just right. Truly the best Mexican establishment in Southeast Kansas!

Extremely wrong, salsa was very salty, and food had no flavor. When all of the staff are white usually a good sign that the Mexican food will be below average. Friends had told us that Ernesto's was the best place to eat, I guess if you don't like taste or any flavor this is the place for you. Seriously didn't like the salsa but had to use it to try to make my meal edible. Wife's meal was horrible and so was my kids, I tried a little of everything that was ordered and it was incredibly bland. I would prefer to eat a frozen Mexican meal over this place, hell kick me in the balls and take me to Taco Bell, it might make me feel better.

I eat at Ernesto's in Parson, KS regularly. It is a long established local Mexican restaurant that simply destroys all of its competition. The quality and taste of the food is so much better than that of the slop served by El Pueblito and the hoard of other sub-par Mexican joints in the area. Ernesto's is always fresh, always accurate and its English fluent staff is always friendly. Try the shredded beef enchilada or the crispy flour pork carnita taco. You won't be sorry and you'll wonder why you ever spent a dime at the competition.
