Todd Schulte has been a favorite of mine for years, especially for his soups and his previous restaurant, Happy Gillis, along with his current venture, Genessee Royale. I was thrilled to discover that his new sandwich shop, Speak, has opened inside Uncommon Stock, where I enjoyed delicious chicken salad and pastrami sandwiches made with in-house ingredients, alongside a tasty bagel with lox from Meshuggah Bagels. The charming, old-fashioned ambiance includes a counter with bar stools for those wanting to dine in, and the establishment is open Wednesday through Saturday from 10 AM to 4 PM.
