When my wife told me we were going to a southern bar in Manchester New Hampshire. Let's just say I had my doubts, my first thoughts were of the last "southern bar" it was in New York City. The first thing that happened when I sat down at that place and ordered a Bacardi and Coke they told me they didn't have any Bacardi. When I asked when they will be getting some more I was told rather rudely not until next Thursday. I told my wife this would never happen at a southern bar if they run out of Bacardi or a few other key Liquors they would send somebody to the store to get them. She asked me if I just wanted to go somewhere else and I said that would probably be our best bet. We ended up not eating or drinking at that bar and chose another place to hang out. What most people don't understand about good Southern bars is Southern Hospitality. I'm sharing this story because when I strolled into BluAqua we had a reservation for my wife's birthday. When our very friendly waitress asked me what wanted to drink I ordered a Bacardi and Coke. She very apologetically told me they were out of Bacardi I glanced at my wife as I'm sure she was thinking what the hell is it with the "southern bars" and no Bacardi. Not wanting to ruin her birthday I knew she was looking forward to a dish they had on the menu which she hadn't had since the last time she was in Georgia. I told the waitress I'll just have a Coke and me and my wife begin kind of cracking up. I jokingly reminded her of what I told her at the last bar, not 10 minutes later as if on cue my waitress came back and told me the owner just got back from the store we have Bacardi now. AAHHH... southern hospitality my worries about the food where subsided. My experience with Southern food on menus in the North has varied from bad to worse I was once told they had Southern mac and cheese on a menu They served me Velveeta Shells & cheese with paprika. I am happy to say this was not the case here my wife ordered the shrimp and grits while I got the short rib grilled cheese sandwich both of which were absolutely delicious. If you only eat one thing here I would suggest the smoked pork belly lollipops they're out of this world fabulous.
