• A sheep’s milk tomme aged 8 months with a natural rind.  Blakesville, one of Wisconsins finest, provides another stunner. It’s a firm and creamy cheese that reminds me of walnuts in a strawberry patch

• It’s good. Very good. L’amuse already selects the best gouda and this is a reserve wheel of aged goat gouda. It’s a stunner

• Parish Hill West West Blue (6oz) $15.00
• The finest blue cheese made in the USA by the ever righteous Parish Hill. Not like the other girls

• Alemar Apricity $10.00
• A beautiful little cannonball cheese of soft cow’s milk cheese encased in a goat cheese geo rind. Alemar produces small batch cheeses in Minnesota made from a local small herd of cows. Charlotte, the cheesemaker, was inspired to make this from her time making little goat’s milk cheeses. The name means “The Warmth of the Winter Sun”. It’s fluffy and sweet, nice with punchy charcuterie and frizzante bianco.

• Jacobs And Brichford Everton (6oz) $14.00
• Matthew Brichford was one of the great American cheesemakers, running a storied family dairy before he passed away earlier this year. This will be the final stretch of cheeses we see from him and an amazing tomme that showcases a great artisan with a grand vision. Everton is an Alpine style cheese, like a young profile Gruyere thats more savory grassy tone than fruit bomb.

• Roelli Cheese Haus Select Cheddar (6 Oz) $15.00
• Select CheddarThis is the one that got me bad. Perhaps it's the electric orange color or the way the acidity fades into this grainy brown mustard finish but I can’t stop eating it. Roelli selects their best wheels of cellar aged Cheddar when Matt Roelli feels it’s at peak Cheddar. He uses the word Robust to describe it which is good for me. If it was a pouch of American Spirit, it’d be the black one.

• From the Vorderfultigen Dairy in Switzerland that apparently derives its name from the phrase 'simply a good one.' Which, when I run out of some beautiful esoteric things to say, I happily borrow. The cheese is delectable, and excitingly fruity, it feels like a smoothie you would have after a long hike.
