- Tasting NotesThis dry white wine opens with the bright acidy of lemon peel and citrus blossom on the nose; followed by pleasant soft bubbles offering flavors of grapefruit and peaches, with a medium-plus finish.Winemaker NotesMidnight Bubbly started as an idea to make a wine we could ring in the New Year with. We wanted a dry and semi-crisp wine that was also refreshing. Our winemaking team spent months performing blending trials before zeroing in on Chardonnay as the predominant grape with Cayuga and Seyval Blanc rounding out the blend. The acid found in Chardonnay plays a pivotal role in acquiring the attributes we were looking for. Exuberant notes of guava and papaya linger almost as long as the summer nights when this wine is best enjoyed. This year’s vintage was processed differently than previous, with a week-long cold soak before fermentation to provide a cleaner finish and fermentation was halted to provide the correct amount of sugar for this style of Riesling and acidity brought with it. This wine shows favorable aromas of pineapple and wild strawberries. Only 389 cases produced!Winemaker NotesIt took quite some time to find the right blend to showcase the lavender, as typically our white fruity blends have a higher acidity. For an ingredient like lavender, we had to do countless trials, so the acidity was low enough to let the lavender flourish. We wanted a dry and semi-crisp wine that was also refreshing. Our winemaking team spent months performing blending trials before zeroing in on Chardonnay as the predominant grape with Cayuga and Seyval Blanc rounding out the blend. The acid found in Chardonnay plays a pivotal role in acquiring the attributes we were looking for.
