- Imported from outside of Naples. They’re spicy, smoky, salty, and even a bit sweet. A pizza’s wild friend.
- Parmigiano Reggiano $8.00
- imported from Parma and the most coveted of Italian cheeses. We grate the whole wheel here, and jar it for you. Aged for a minimum 24 months This is Parmigiano Reggiano not its cheap little brother Grana, which so many restaurants use, because they think you cannot tell the difference.
- Pecorino Romano $7.50
- The other quintessential cheese Italians use for pizza/pasta is Pecorino Romano. If Parmigiano was made from sheep instead of cow. It’s salty rather than sweet, and a great partner for Italian food.
