Gaia's Galley, a food truck in the Boulder area, offers a delectable array of fresh and flavorful vegan dishes prepared by the talented couple, Forrest and Ana. Ana's Mexican-inspired creations, like the Black Bean burger, are absolute culinary delights. The food is so scrumptious and healthy that dining at Gaia's Galley feels more like a gourmet restaurant experience than a food truck visit. I can't wait to seek them out again soon!
