In my quest for the ultimate taco in McAllen, I sought out recommendations from locals but found no consensus. Determined, I ventured on my own, guided by an unwavering hunger for the perfect taco. After a fruitless search, I stumbled upon Las Enchiladas, a humble eatery with a menu entirely in Spanish - a comforting sign of authenticity. The tacos, with their ingenious fried corn shells and flavorful beef, paired perfectly with a refreshing horchata, making the entire journey worthwhile.
