As we journeyed through Hudson Hope, our hunger led us to seek out a satisfying meal with limited options available. Consulting the hotel manager for a recommendation, we were directed to On The Rim, a local favorite where the owner himself frequents. Delighted by the flavorful offerings, I indulged in a soft beef taco and veggie nachos, while my husband savored Taco fries and a Chicken Chimichanga. The hot sauce, made with fresh jalapenos, added a zesty kick to the meal, and the freshly fried tortilla chips elevated the nachos to a delicious level. Originating from East Los Angeles, I was pleasantly surprised by the quality and authenticity of the Mexican cuisine in this small British Columbia town, providing a welcome departure from the usual burger and fries fare. Satisfied and content, we continued our journey with full bellies, grateful for the delightful dining experience in Hudson Hope.
