I ate at Parky's today...just by chance and I had a revelation. My dad used to work with Portillo before he became famous and had a stand on Harlem Ave. called "OUR DOGS MAKE FRIENDS", his hot dog was called MEAL ON A BUN. Poppy seed perfectly steamed bun, Vidalia chopped onions, farm raised tomatoes cute just like PARKY'S, celery salt, and a combination of chopped dill pickle/fresh dill weed/mustard that he would smear inside every bun. He served them in a corrugated paper boat with shredded lettuce and cucumber slices and hot peppers. He used at the time Ballpark and Eisenberg Polish for the hot dog sausage. I know A LOT about hot dogs.
Parky's is not Vienna, what a revelation, real flavor and spice and juicy meatiness. PARKY'S IS, BY FAR, THE BEST CHICAGO STYLE HOT DOG I HAVE EATEN. TEN STARS recommended without hesitation. But will they say who makes their hot dog sausages?
