El Nopal on Bardstown Road in Fern Creek just reopened after a long renovation, now sporting bright yellow colors and the same authentic Mexican flavors that keep me coming back for their unbeatable chips and salsa. The spacious, vibrantly decorated interior sets the stage for favorites like enchilada supremas and steak ranchero, all served hot and fresh with service so good it had me dancing despite the lively music-definitely my new go-to for fast Mexican food around here!
