I grabbed a couple of Good Earth Carrot-Zucchini-Walnut muffins from Piazza's in San Mateo, and they were packed with visible carrot shreds and looked super moist. The taste was unexpectedly light, tender, and absolutely delicious - I couldn't get enough! Can't wait to swing by Piazza's again to check out more of Good Earth's baked treats. (By the way, I found out they're no longer a cafe, just selling wholesale to stores.)
