Before embarking on our bar hopping adventure, my friends and I always make sure to make our first stop at this local joint. The drinks are decent, but the real highlight is the selection of shots - I personally love the Blue Viagra or the Swedish Fish with the actual candy inside! Adjacent to the main bar is the Stiefvater, a martini bar with a completely different vibe once you step through the door. While I could do without the lingering cigarette smell, the Varick remains one of my favorite dives in the area, offering affordable drinks and a unique atmosphere that's perfect for kicking off a night out on Varick Street. Just be prepared for the fact that many patrons here still light up indoors, which might be a plus if you're a smoker.
