I recently discovered a delightful treat at the park in Eastsound during the summer solstice parade - handmade ice cream sandwiches from a colorful, retro-themed cart called crí¨mecart. The peanut butter cookie and salted caramel ice cream sandwich I tried was absolutely delicious, with the cookie being soft yet firm, and the ice cream staying cold without dripping. The girls running the cart, Michelle and Sommer, were so sweet and accommodating. I hope to stumble upon their cart again soon and try more of their creative flavor combinations!
