At the 2022 Joe Nall fly-in in Woodruff, SC, I discovered the Pig On Fire trailer, where I indulged in perfectly done pulled pork and one of the best brisket sandwiches I've ever tasted, complemented by delicious scratch-made sauces, all served by friendly people at great prices, making it the best barbecue experience I've had in the IL/MO area.
