I came across this food truck parked in front of the Expo in Long Beach during a 2-day event. SoCal Caribbean's vegan options caught my eye, blending curried chickpeas and potato with pineapple coleslaw and mango hot sauce in a burrito. The mix of sweetness from the fruit in the burrito was a pleasant surprise, adding a unique twist to the flavors. Despite the listing showing as "closed," I can't wait to have their delicious food again!
