In the unique stretch between Santa Fe, Espanola, and Los Alamos, El Parasol stands out for its delicious Mexican food and friendly service. I've enjoyed everything from their crispy chicharrones to hearty breakfast burritos, and I always leave satisfied after a quick bite in a relaxed atmosphere.
