Ramen restaurants in the US often disappoint me with their high prices and excessive saltiness, but I was pleasantly surprised during a recent visit. The vegetarian ramen had a rich, complex broth, perfectly cooked tofu, and a delicious spicy chili paste that elevated the experience, making it one of the best I've encountered outside of Japan.
