There's this really cool food truck that got featured in the Galesburg Register Mail, and it's always on the move between H&R Block's parking lot in Galesburg and the square in Macomb. They serve pulled pork nachos that are loaded with pico de gallo and nacho cheese, which is their most popular dish, and they also do a tasty breaded tenderloin with all the fixings. The pulled pork sandwich could use a bit more oomph, but you can ask for extra BBQ sauce or toppings to spruce it up. Don't worry about tracking them down, just follow them on social media for updates on where they'll be next - totally worth a visit!
