Relying on greasy fried food is not the way to sustain Peking restaurant thru the 21st century. Your food is too greasy and oil fried and spare ribs aren't red.
21st century Chinese American cuisine--less oil, less frying and more steamed veggies and meats from locally grown sources. Peking should be a leader in shaping Chinese American cuisine in our region. Start one dish at a time and stop using PLASTIC bags for take out.
