In the dozen or so times I’ve been there (always with various guests and one regular), we’ve always had a soup. The P5, Tai Sach, has always been a favorite as well as P7, Chin Nam Gau Gan Sach (with the brisket tendon and omosa). This dish is well prepared with fresh sprig of a waxy, leafy basil on top perfuming the entire dish; delicious. Most Pho dishes come with sprouts, cilantro and lime.
The very delicately flavored broth is quite refreshing and I’m very fond of bean sprouts. I’ve even had the version with tripe; never had it before until at Pho Bihn and it was very interesting. In fact, I’ve had it twice now. I guess I’m a convert.
The Beef with Snow Pea Pods in Special Sauce (#110) is a dish one of my friends had (I tasted it for quality control of course) was so good, we both sopped up the sauce with bread after the dish was consumed. We agreed that it was one of the tastiest we’d had in a while.

Once, the owner came to our table after I asked a question and he said he had some eel flown in (at least, that’s what I thought he meant) and made us a special eel dish that was delicately cooked and made me look at eel in a VERY different way. Damn if I can remember what it was on the menu; Crispy Fried Eel in a Garlic Sauce on a salad. I was with a Korean friend and he knew about it. I didn’t care; it was VERY good. Can’t seem to find it on the menu so maybe it was a special. Now I have to go over that menu again with a magnifying glass next time (indexed and texts of your menus please!).

The Summer Rolls (we usually have the pork version), #19 is quite good and the rice paper wrappings are actually nice and “grabby”; they don’t slip in your fingers and the contents STAY wrapped (mostly). I like crunchy interiors so it sits well with me.

And as a rule, we usually get a curry of some kind. Almost always #117, Ga Xao Ca Ri. Pair that with a loaf of bread and it’s heaven. Not the usual curry, but a very smooth, almost buttery curry. A serious change and I make sure it’s around when we’re there.

All in all, an excellent place to go to and I seem to find myself going there every couple of weeks or so. The prices are right, the food is good and hot to the table. Never be bashful about asking for another loaf of bread. It’s kind of a generic, plain “French” but it serves the purpose even if it doesn’t offer much flavor of it’s own. You’ll need it
I can recommend it highly.
