Waiting in the quiet neighborhood, anticipation grew as I counted down the minutes until the food truck's window opened, promising authentic flavors with a Mex CocaCola in hand-a true sign of something special to come. The birria and asada tacos, paired with a special quesadilla filled with Al Pastor, pineapple, and charred jalapeños, were bursting with rich, smoky depth that lingered long after the last bite, making every moment of the wait worthwhile.

I discovered a new food truck while waiting in the neighborhood. Tried their special quesadilla and Mex CocaCola - definitely worth the wait! The food truck is now a hard stand building in Cornhusker Mall, offering the best birria tacos in Lincoln.
