Sometimes you need a reservation sometimes you don't? You just have to guess which it's going to be? I understand they are busy. But your hosts need to not act shocked. When people show up without a reservation at a chicken sand which restaurant. Empty seats and you have to wait a hour for a table? Plus telling the other host standing there we had to be done in a hour. Found it incredibly pretentious. The owner is incredibly nice. But not the staff.
