I've been enjoying exploring different vegan food options during Veganuary, especially when I don't feel like cooking. Today, I tried a special vegan brunch at Cafe Hey, a local spot I hadn't visited in years, after wandering through the farmer's market. The Cowboy Skillet I ordered with crispy home fries, vegan bacon, and vegan over easy eggs was a delicious twist on a classic brunch dish. Despite a slightly long wait, the laid-back atmosphere and freshly made, tasty food made the experience worthwhile.
