After moving from Oklahoma, I struggled to find authentic BBQ in D.C. until discovering Hill Country, where the smoky aroma and perfectly smoked ribs and brisket instantly reminded me of a backyard cookout. The sides complemented the meal well, the service was friendly and quick, and the rustic, casual atmosphere made it a comfortable spot to enjoy great Texas-style BBQ.
