Definitely the best brisket north of the Texas state line. Possibly better than most brisket within Texas. Judge has done brisket just right with the dark brown (not burnt) outside with the pink ring underneath, covering tender and juicy meat that falls apart in your fingers. Tastes great even before you add the sauce. The only thing that could make it any better would be if he served it on butcher paper with a roll of paper towels. If you want real Texas BBQ look no further.
