I tried the shrimp ceviche and the encebollado de pescado from the food truck on 80th and Roosevelt, and while the ceviche was perfectly cooked and flavorful, the fish stew really won me over with its rich broth and hearty ingredients, especially after reheating it with fresh lime and rice. The freshly made chifles and the bollo de pescado were also delicious, and though some pieces of fish were a bit strong for my taste, the authentic Ecuadorian flavors reminded me of home and kept me coming back for more.
