The vegan tofu scramble at the Hyatt Regency was delicious, and the front desk staff were really helpful and considerate. I had brunch there back in December 2019 with my Aunt, and the bottomless mimosas were a hit. Our waiter, Chris from Michigan, was fantastic - he engaged with me while I waited for my aunt to arrive, making the experience even better. The convenience of picking up pre-packaged foods at the hotel was perfect for a day at Disneyland, or for a quiet dinner in my room to avoid delivery charges. The prices were a bit high, but still more affordable than dining inside the theme park. I'd love to see even more options available, but overall, they're doing a great job.
