The worst barbecue I have ever had. The ribs tasted like they were boiled and the chopped beef had no seasoning. The beans tasted like they were just poured from the can. I got a bottle drink and I ask for a cup of ice and had to pay for it. At most barbecue places the pickles and onions come with it if you request it but I was told the pickles was a Xtra dollar and some change. I definitely want be going back there. I wasted a good $40 😡😡

The barbecue is delicious. The menu online says prices are subject to change I guess they are! 975 sandwich and the guy cut it wrong on the grain so it was stringy. I think their sauces terrific and their barbecue usually is. I hadn't been there in 3 years so I was very disappointed. I would still highly recommend them over bodacious.

I used to eat at Carter’s in the 90’s every Friday. I told everyone it was the best BBQ in East Texas Hands down. It has been several years since I have been, my wife and I went to lunch there yesterday. We both had the sliced brisket, she had sausage on the side and I had boudin. The brisket was tender, but dry and zero smoke flavor. My wife and I both agreed it tasted like pot roast. The sausage was OK but had a synthetic casing that I despise. The boudin was good, very spicy but well made with natural casings. Potatoes salad was nothing special. The $34 lunch was very disappointing. I don’t understand what happened to my favorite BBQ joint ? I was told that Carter has passed away? I hope that it was just a bad day and maybe the brisket we were served was mistakenly wrapped in foil and lost its smoked. Carter started out smoking with Red Oak and a quarter of dry hickory. You could smell the BBQ cooking on I20. When we walked in the yesterday- there was no smoke smell of BBQ. Very Sad.

I can cook ribs and make my own sauce and did for years for friends and family. So a few times over the years that I tried ribs at other places they was either crunchy , tuff are they're cook wrong, boiled and then grilled . Something crazy like that. So I haven't tried somebody else's ribs in many many years. So today my wife come in with some ribs from Carter's . Let me tell you these are the best damn ribs I've ever eat. Better than my own , and that's kinda hard to say. They're so good I didn't even put any sauce them. I never write about things but I had to say something as good as they are. Keep up the good cooking. Y'all have the best ribs I've ever eat.

Literally waited 25 minutes the line which was looped into the Adjoining property only to get to the front for them to tell us all they had was boudin and links...
No reason whatsoever the girl couldn't have walked through the lion telling everyone this had a time But it won't happen again

The ribs are the best in East Texas. No BBQ sauce needed. Fall off the bone, juicy and very tender. The food value for your money is extremely good. I've eaten at many other rib places in the Tyler/Longview area and none of them can compete with Carter's prices and quality.

Carter's ribs is the best ribs ever even better than my mothers. They fall off the bone and melt in my mouth with their delicious bar-b-que sauce to make them taste even better. They are undeniably good finger licken good
