My wife and I visited the new Galleria location for lunch today, and it was our first time there. The food was delicious, especially the fresh salsa and crispy chips, although I wish my chicken taco soup had a bit more flavor. Guadalajara is one of my top 3 go-to restaurants in Hoover - it's a refreshing change from the generic corporate feel of other places. The beef soft tacos are my usual order, and they never disappoint. The cheese dip is above average, and the margaritas, though a tad pricey, are worth trying at least once for their size alone. If only they offered pitchers to help with the bill - but overall, Guadalajara is a solid choice for tasty Mexican fare.
