The Mexican restaurant in Castle Rock serves up some great food, especially their breakfast burritos, which are a fantastic value. While the ambiance and service are decent, they don't quite match the quality of the food. During my last visit, I enjoyed my Chile relleno and the bright atmosphere, although the chips could have been fresher; overall, it was a satisfying meal that I would happily return for.
