My fiancí© and I have traveled extensively, and every time I visit him in Colorado, I make it a point to enjoy the incredible Mexican cuisine here. As someone with roots in Guadalajara, I find the dishes to be some of the most authentic I've encountered, especially the breakfast burritos and rolled tacos. Despite a few minor imperfections, the food is consistently delicious, and I look forward to every visit.
