After a long absence, returning to Los Vaqueros for my dad's birthday lunch was like rediscovering a treasure of authentic Mexican flavors, where every dish-from the tangy sour cream enchilada to the smoky shrimp diablo enchiladas-delivered vibrant, fresh tastes that sang with each bite. The warm, cowboy-inspired ambiance combined with attentive service and that first basket of warm chips and lively salsa set the tone for a festive, satisfying meal that left me eager to explore more of their enticing menu.
