As a long-time Portland native and strict vegetarian, I can confidently say that Saigon Kitchen serves the best pad Thai I've encountered in the city, expertly made without egg or fish sauce upon request. Their vegetarian spring rolls and the "Broccoli, Baby Corn, and Mushroom over Rice Noodle" dish are absolute must-tries, offering incredible flavors that overshadow any concerns about decor or ambiance.
