Usually, I steer clear of fusion joints because they tend to disappoint, but 533's spring roll bar surprised me with a playful blend of Vietnamese and Japanese flavors that actually works. The broth in the Bun Bo Hue packed a spicy punch that sent my taste buds on a wild ride, even if it wasn't 100% traditional, and the service hit all the right notes without the usual hovering. The atmosphere is lively yet comfortable, and between the creative dishes and attentive staff, it quickly became my new go-to for inventive eats and killer cocktails in Palm Springs.
