Driving 30 minutes in the morning at least once a month just for a breakfast burrito from Emilio Zapata restaurant in Meridian is a must for me. The delicious, oversized burritos and friendly staff make the wait worth it every time. Give this family-owned gem a try for a truly authentic and satisfying Mexican breakfast experience.
