The black cod sushi features nigiri torched tableside to slightly melt the fish's fat, though the sweet soy alone doesn't fully complement its dense texture; I prefer the baked miso-marinated black cod for its hot, flaky, and umami-infused qualities. The menu also offers well-prepared a-la-carte nigiri, creative rolls like the black dragon with sweet-glazed eel and tempura bits, and non-sushi dishes such as crispy-skinned hamachi kama, all served in a cozy atmosphere with attentive service.

The black cod sushi at Sushi Bar offers a unique twist on the fish, with the nigiri torched tableside to create delicate layers of melted fat within the cod. While the sweet soy provided a good base flavor, I felt it needed an additional element to truly captivate my taste buds. Personally, I still lean towards the baked miso marinated black cod for its hot, flaky texture and sweet umami essence, making it a delightful choice for sharing.
