Hitoe has truly bounced back with impressive quality, offering exceptionally fresh fish and expertly prepared dishes that deliver a melt-in-your-mouth experience, especially the sashimi and seared hamachi kama. While prices have increased, the elevated flavors and attentive service make every bite worth it, and the cozy, relaxed ambiance adds to the overall enjoyment.

Hitoe is making a remarkable comeback, better than ever, with an elevated quality of fish that truly enhances the dining experience. Despite a slight uptick in prices and a minor hiccup with the nigiri rice, the service remains outstanding, the ambiance serene, and the dishes-from melt-in-your-mouth sashimi to the best mentiako udon I've ever had-are consistently superb, making it a standout in the city's sushi scene.
