I checked out a modern Mexican restaurant in downtown Bellingham that has tons of vegetarian and vegan options, and I loved how the menu works-you choose a main and add sides as you like. The food was delicious, especially the roasted garlic and potato enchilada, and the vibe was super chill with friendly service.
