Comments Evaluator Finding: The soda pop gun dispenser located at the bar was found with an accumulation of slime mold inside the nozzle. PIC states that they routinely soak the pop gun but they do not routinely scrub it. All other food contact surfaces were satisfactorily clean. Corrected: PIC was shown how to dismantle the cobra head. PIC washed rinsed and sanitized cobra head and nozzle during this evaluation.

Comments Evaluator Finding: The following areas of the facility were found in need of cleaning: 1) under condiment top cooler - floor under unit spilled food and liquid 2)Floor interior of beer cooler. Cleaning has improved since the last evaluation. The above two areas need more attention. PIC states that she has been trying to keep up on cleaning. PIC was trying to clean during this evaluation but she is also tending the bar and cooking food. She is the only one working today. Correction: Clean the above listed areas in order to prevent the accumulation of grease and grime, and to prevent the possible harborage of insects and other vermin. Continue with your cleaning routine and pay attention to the above listed areas. Because of continued cleaning violations an Administrative Action Request will be forwarded to the EH Program Supervisor.

Dirty conditions on health inspection rpt

Finding: drain line from ice bin and cobra cup holder fond below flood rim of floor drain at the bar. Person in charge stated that a moisture problem was recently repaired and the drain lines had become detached from the metal bar that held up the drain lines. Correct by providing an air gap at this location. Return visit will be on 8/4/2011 to verify that air gaps are provided.,

Finding: large pot of coney sauce, pot of mac & cheese, tray of cooked chicken, open package of hot dogs, and open container of 1/2 & 1/2 found not marked indicating the length of time held under refrigeration. Person in charge is knowledgeable of datemarking and stated that food is not held for longer than 7 days. Sliced ham is portioned and frozen and only enough if held thawed to last one day. Corrected: Person in charge knew when the foods were prepared and properly date marked the food. The mac and cheese and cooked chicken is owner food not a menu item. Person in charge will talk to owner about setting aside and labeling a space in the refrigerator for owner and employee food so it is not confused with faciliyt food. ,

Finding: Raw meats stored above cheese and produce in 2 door cooler in the kitchen. Owners personal cooked & raw food mixed in with facility food....these foods were found not date marked and without lids in same 2 door cooler. Person in charge stated that owner has been using the kitchen to store personal foods due to diet restrictions and lack of water at home. Corrected: Person in charge moved the raw meats to bottom part of the cooler and will label the personal food and separate it from facility food. ,

Finding: Magic foam cleaner stored next to loaf of bread, ketchup and mustard on food prep counter. Corrected: Person in charge moved the cleaner to chemical storage area and explained that the kitchen is in transition, being organized so it is easier to clean a lot of things are not in there proper place because of this.

Finding: both microwaves found soiled with crusted on food debris. Correct by cleaning and sanitizing the interior of the microwave as needed but no less than once every 24 hours.,

Finding: low boy cooler in kitchen not holding food below 41 degrees F. according to person in charge. The unit went down this morning and the owner is out getting materials for repair. The person left in charge was instructed to discard the food in the unit by the owner and was in process of doing this job during this evaluation. Food was found at 54 - 58 degrees F. This unit will not be used to hold food cold until repairs are made and owner checks to make sure that food can be held below 41 degrees F. Two door refrigeration unit in the kitchen is holding food below 41 degrees F and so is the beer cooler. Correct by repairing the unit so food can be held below 41 degrees F. ,

Finding: door in hallway next to kitchen found with 2 inch gap at threshold. Correct by closing the gap so door can be tightly sealed.,

Finding: cleaned and sanitized dishes and equipment stored under food prep counter found soiled with dirt and food debris. Person in charge stated that the facility is in transition and being organized for easy cleaning and storage. Correct by storing cleaned and sanitized dishes and utensils in a protected area in an area that is easy to keep clean - where food debris and dirt does not fall onto the surfaces.
Finding: equipment and tools not related to food service stored in hallway between kitchen and dry storage area, boxes of old plastic dishes, of assorted cans and paint, boxes of tools on floor of dry storage area, blocking entrance into the room. Person in charge stated that the facility is in transitions and a lot of things are not in their proper place and need to be removed. Correct by removing unnecessary items from the facility
