With the exception of the trivialized desserts, the food is excellent, and the service quite good.
The wine list is absurdly overpriced. Gazing through the darkness at every table, I observed that I was the only diner with a bottle--small wonder! Other than the obvious of lowering your markup, my suggestion would be to have your 'sommelier' actively involved in service. Wines that gain notoriety from WS are generally obscure, and therefore need to be hand sold. And no, i did not harass the kind and efficient server as to whether she knew what a 'Montefalcone' was.
The creature comforts are an abomination: does the restaurant offer carry-out?
First, the darkness inside is that of a dungeon, making both the menu and the wine list unreadable. The tables for two are four feet long, making conversation nearly impossible (of course, it's impossible to actually see the person to whom you're talking, anyway).
Even on a weekday night when the room was only half-seated, the noise factor is impossible. Failure to install sound-absorbent material on the ceiling makes the room into a virtual band-box.
All this was extremely important because I was entertaining an old friend from Boston, and your restaurant was both nearby and recommended. For three hours at my house we chatted about old times and good memories until it was time to depart and grab a bite.
To make a long story short, entering Paolo's killed the evening, because conversation became impossible; this, precisely is what I'll remember of the establishment!
In short, the restaurant seems run by a highly skilled kitchen-dwelling owner who's permitted a bunch of semi-indifferent 20-year olds to have things their own way. This begins with a hostess who, on a night of empty tables, lacks the common courtesy of asking where we'd like to be seated. 'Quite common for Atlanta, yes, indeed--but not for a restaurant worthy of having a good reputation among the adult crowd.
