Having enjoyed meals here since my college days at NMSU in the 1970s, the flavors still impress me deeply-especially the Chile rellenos, which remain the best I've ever tasted, and the tamales that surpass all others. Sharing stories with the original family who started it all added a heartfelt touch to the visit, complementing the warm, friendly atmosphere that makes every guest feel like part of an extended family. Even after more than four decades, the green enchiladas continue to stand out with their perfect balance of flavor and heat, while the fresh chips and salsa complete a truly memorable dining experience.

My long-standing tradition of dining at Chope's since my time at NMSU in the 1970s was reaffirmed today with the exceptional Chile rellenos and tamales, enhanced by the presence of the original Chope's family sharing stories, making it a truly memorable experience.
